First, you don't need to get a very large fryer at all. They heat up very quickly and can cook foods fast. If you need to make more food, it's easy to cook another serving. The smaller ones are easier to deal with than the larger models. You really don't need a fryer that holds more than 4 liters of oil.
Look for baskets that have handles that don't heat up. This is a big problem because sometimes on cheaper models the handle becomes so hot that one must be very careful about it being too hot.
Make sure your fryer has a thermostat. Some fryers just turn on and off which doesn't give you enough control over your food. Some fried foods taste completely different if cooked on a high heat versus a lower one. It's important to have control over the temperature of the food you cook.
At times fryers can cause fires. Water will not put out these fires but only make them worse spreading the grease fire around your kitchen. To be extra safe have a portable fire extinguisher on hand so that you will be able to put out these fires.
Look for recipes that you could use to have more variety with your deep fat fryer. There are many odd things that an be fried and made into delicious treats. Experiment and come up with things that you or your guests might enjoy.
